Rustic apple galette with salted butter caramel

Ingredients

For the salted butter caramel (you can also use a store-bought caramel if you’re in a hurry) :
– 200g of granulated sugar
– 150g of liquid cream
– 50g of salted butter

For the dough :
– 300g of all-purpose flour 
– 3 tbsp of granulated sugar 
– 1/2 tsp of vanilla extract 
– 150g of salted butter cut into cubes (at room temperature)
– 8cl of lukewarm water 

For the galette :
– 3 medium sized apples (I recommend using the Pink Lady variety) 
– 4 tbsp of almond powder 
– 4 tbsp of the salted butter caramel
– 20g of unsalted melted butter

Recipe

1. Start by making the dough :
In a large bowl, mix the flour and the sugar, then add the butter and vanilla extract and rub everything in with your fingertips until the mixture resembles fine breadcrumbs. Gradually add in the water and knead for about 2 minutes until everything comes together in a cohesive ball. Cover the dough and let it chill in the fridge for 30 minutes.

2. Make the salted butter caramel :
Start by heating the liquid cream in the microwave at 700W for 45 seconds.
Then make a dry caramel sauce. Add the sugar to a pan and make sure to spread it evenly. Place the pan over medium heat and wait for the sugar to caramelise – do not stir, even if it’s tempting !
Once the sugar has started to caramelise around the edges, grab a wooden spatula. Start to mix gently by making small circle motions, only where the sugar has melted. Bring the melted sugar into the middle of the pan, this should make the whole sugar dissolve. Once the whole sugar is melted, keep stirring over medium heat until it changes from a light gold to a light amber.
Once the caramel is ready, turn the heat on low and gently add the liquid cream, divided in 2 or 3 times, stirring constantly. Be careful, this can cause projections ! Once the cream is incorporated, take the pan off the heat, add the cubes of salted butter and mix well until you have a smooth caramel. 

4. Finally, make your rustic galette :
Heat your oven to 200°C. Cut your apples in half and then cut into thin slices (about 2mm thick).
Roll out the dough into a large circle onto some parchment paper, then transfer everything onto a baking sheet. If you just made your own caramel, reheat it on low for a minute so that it becomes easier to spread – if you are using store bought, heat it in the microwave for about 45 seconds at 700W.
Coat the center of the dough with the salted caramel, leaving about 5cm from the edge. Sprinkle with the almond powder then arrange the apples on top and fold in the edges of the dough. Gently brush the apples and the dough with the unsalted melted butter and bake for 30 to 35 minutes.

Enjoy the galette preferably while it is still warm . Serve each slice with a scoop of vanilla ice cream or a dollop of crème fraiche 😋
